internet pancakes

What a stupid day.  When you are having a stupid day, what can you do but make pancakes?  But don’t use a mix.  It is much better, if you are having a stupid day, to make pancakes from scratch.  I like to use this recipe.  They are called internet pancakes because I found the recipe on the internet somewhere.

Dry ingredients

  • 1 1/2 cups all purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar

Wet ingredients

  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons butter, melted

Mix the dry ingredients carefully.  Mound up in the center of a large bowl, make a well in the center of the mound and pour in the wet ingredients.  You don’t have to beat the egg ahead of time but you can if you want.  Mix well but don’t over mix.  It’s OK if there are a few lumps.  If it is way thick, you can add a bit of milk, but don’t make it too thin.  You could probably use oil of some kind instead of butter.  Not olive oil.  That would taste weird with syrup.

Take this batter and make pancakes out of it.  Heat up a skillet or a griddle over medium to medium high heat.  Put in some oil or butter– use a nonstick pan and you will only need a little bit.  Pour the batter in until it is the size you want your pancake and let it cook.  It will puff up and look really nice.  When the top is starting to get dry and is full of burst bubbles all the way across, turn the pancake over and cook till done.  You can probably take it from there.

If you have a lot of people, you may need to double or even triple the recipe, and maybe heat up a big griddle or a second skillet.  If it is just you and some dogs eating the pancakes, you will have some left over.  Just put them in the freezer in one of those plastic zipper bags with some wax paper in between them so they don’t stick together, and you can thaw them in the microwave and thereby have pancakes any time you want, until you have another stupid day and need to make some more.
